Eilen ennen iltapalapitsaa tein toki kuvanmukaisen lounassalaatin.

Yesterday’s salad, while quite tasty, was fairly mild in flavour, so today’s plan was to use roughly the same ingredients but make sure to have a stronger and different tasting lunch salad. Yesterday I used store-bought herb mayo, so today the first step was to whip up a dressing. Used the leftover yoghurt as the starting point and considered many different options like ajvar and mustard to flavour it, but settled on smoky hickory ketchup and smoked paprika. Added a little water too to make the dressing suitably thin and left it to fridge to wait for it’s future friends. Boiled some whole grain pasta, melted frozen peas, chopped the leftover ham with cucumber, zucchini and iceberg lettuce to make the base of the salad. Then dug out some onion, celery and parmesan. Finely chopped a fairly small bit of onion, finely chopped some celery leaves and grated a good amount of parmesan to give more flavour to the whole thing and mixed them in. Poured on some of the dressing and sprinkled some fresh sage and basil to give the thing a nice finish:

And it is totally different and equally delicious as yesterday. The dressing alone would have given a very different tone to the proceedings, but also in other respects the same lunch was a totally different lunch. Yesterday with fewer and milder ingredients the tomato took center stage with the ham, today the fresh herbs and celery leaves and the stronger dressing were quite prominent. The next time I make ham salad I won’t be using pasta, or the next time I make a pasta salad I won’t be using ham 🙂

I think it safe to say I’m a salad aficionado, and one of these days I’ll make a whole post called I don’t know why everyone else doesn’t eat salads all the time? 🙂

Now it is time to have some cooking chocolates for dessert 🙂
